A caudle (or caudel) was a hot drink that recurred in various guises throughout British cuisine from the Middle Ages into Victorian times. It was thick and sweet, and seen as particularly suitable and sustaining for invalids and new mothers. At some periods of history, caudle recipes were based on milk and eggs, like eggnog. Later variants were more similar to a gruel, a sort of drinkable oatmeal porridge. Like the original forms of posset (a drink of wine and milk, rather than a set dessert), a caudle was usually alcoholic.

  • Kandeel ist ein traditioneller Punsch aus den Niederlanden, der durch Zugabe von Eigelb eine cremige Konsistenz erhält. Zur Zubereitung werden zuerst kochendem Wasser Nelken, Zimt oder Muskatblüte und Zitronenschale zugegeben. Wenn das Wasser wieder abgekühlt ist, werden Eigelbe und Zucker in einen zweiten Topf gegeben und verschlagen, nach und nach das aromatisierte Wasser und ein gleich großer Teil Weißwein aufgegossen und die Flüssigkeit bei mäßiger Hitze (eventuell im Wasserbad) aufgeschlagen, bis sie eine cremig-schaumige Konsistenz bekommt, ohne jedoch zu gerinnen. In einer Variante wird der Wein durch Bier ersetzt, in alten Rezepten kommt auch zusätzlich Butter vor. Kandeel wird noch warm getrunken. (de)
  • Kandeel is, net als kraamanijs, een traditionele die sinds de 17e eeuw bij kraamfeesten wordt geschonken. Het romige, gele drankje heeft een alcoholpercentage van 17%. Kandeel lijkt een beetje op advocaat, vanwege de brandewijn en de eieren. In vroeger tijden maakte men deze drank zelf, tegenwoordig is hij kant-en-klaar te koop bij slijters. (nl)
