In addition to being served in many restaurants in Yucatán, Quintana Roo and Oaxaca, this breakfast dish is also common in Cuba and Costa Rica. Don Jorge then proceeded to improve the governor's favorite breakfast (eggs, tortilla and refried beans) by adding some steps to the elaboration of the sauce such as frying the onion in olive oil (prior to its addition) and the use of additional ingredients such as smoked Spanish ham in squares and cooked peas. The result was the original recipe for huevos motuleños, which has undergone transformations and the addition of different ingredients such as fried plantains, daysi cheese, sopero cheese, etc. (en)
