Aufgrund seines besonders feinen Geschmackes war dieses Stück in der Vergangenheit, nicht zuletzt auch wegen des hohen Preises, für die wichtigen Personen der Dorfgemeinschaft reserviert. Dies führte zu seinem Namen. Das Fleisch eignet sich besonders zum Schmoren, Kurzbraten und zur Zubereitung von Geschnetzeltem.
