Ann C. Noble is a sensory chemist and retired professor from the University of California, Davis. During her time at the UC Davis Department of Viticulture and Enology, Noble invented the "Aroma Wheel" which is credited with enhancing the public understanding of wine tasting and terminology. At the time of her hiring at UC Davis in 1974, Noble was the first woman hired as a faculty member of the Viticulture department. Noble retired from Davis in 2002 and in 2003 was named Emeritus Professor of Enology. Since retirement she has participated as a judge in the San Francisco Chronicle Wine Competition.

Elle est la première femme embauchée en 1974 dans le corps professoral du département de viticulture et d'œnologie de l'université de Californie à Davis. Cette chimiste a inventé en 1984 la « roue des arômes » qui aide les experts comme les novices dégustant le vin à améliorer leur capacité à reconnaître les différents arômes présents dans les vins en les regroupant en différentes catégories selon une terminologie qui décrit le vin. Professeur retraitée en 2002 de l'université de Californie, elle y est nommée professeur émérite l'année suivante et intervient depuis comme juge dans le concours de vin Francisco Wine Competition organisé et sponsorisé par le San Francisco Chronicle.
